 Chef McNally’s Horseradish Crusted Salmon
with Moroccan Tomato Jam

6 (8oz.)  salmon fillets

Spicy Tomato Sauce:

4 Tbs olive oil
2 medium onions, chopped        2 tsp ground ginger
4 garlic cloves, minced            4 c. plum tomatoes, crushed
2 tsp cayenne pepper            2 Tsp honey
s&p to taste

Heat olive oil in saucepan.  Add onion & garlic.  Saute over medium heat until onions Re soft and translucent.  Stir in cayenne pepper, ginger, tomatoes & honey.  Simmer for 30 minutes.  Add salt & pepper to taste.

Horseradish Crust

1 lb no salt butter            10 scallions, chopped
1 c. white horseradish        2 oz. smoked salmon
1 TSP fresh ginger, grated
1 TSP wasabi powder        2 TSP Dijon mustard
2 egg yolks                ½ c. matzah meal
S&P to taste

Mix all the above horseradish crust ingredients and puree in food processor to a medium smooth consisitency.  Spread pureed mixture to completely coat tops of salmon filets.  Place in a glass baking dish, and bake in 400 degree oven for 15 minutes.

Serve fillets on a bed of the spicy tomato sauce.

Serves:  6

London’s Perfect Brisket
8-10 servings

1 5-lb brisket of beef
2 t salt
fresh pepper to taste
1 garlic clove, peeld
2 T vegetable oil
3 onions, peeled & diced
1 10-ounce can tomatoes
2c red wine
2 stalks celery w/leaves, chopped
1 bay leaf
1 sprig fresh thyme
1 sprig fresh rosemary
¼ c. chopped parsley
6-8 carrots, peeled and sliced

1-sprinkle brisket w/salt & pepper & rub w/garlic.  Sear brisket in hot oil & then place, fat side up-on top of onions in a large casserole.  Cover w/tomatoes, red wine, celery, bay leaf, thyme & rosemary.
2-Cover & baked in preheated 325-degree oven for 3 hours, basting often.
3-Add parsley & carrots & bake, uncovered, for 30 minutes more or until carrots are cooked.

1 bottle Heinz Chili Sauce and 1 bottle of  beer (lager)
